In the book "Microsoft Acess 2010 Step by Step, it notes on page 9 that the sample databases can be opened in either 2007 and 2010.
I have Access 2010 and when I open the the first practice file, the name of the file is given, followed by (Access 2007).
Does this mean that the file was created in 2007? If I change things in the file using MA 2010, will this render the file unusable in MA 2007?

Yes, that file was created in Access 2007, and Access tells you that as you noticed. The question about if you make changes in 2010, can you open it in 2007 is complicated, because it depends on the changes you make to it. This page explains backward compatibilty for Access 2007 with 2010 files -
